Baking Powder Biscuits- Jan Walker Style

Baking Powder Biscuits.- (I probably should have said don't forget the honey and jam. :))
2 c flour
1 T baking powder
1 t salt
1/4 c shortening
3/4 c milk
Mix dry ingredients. Cut in shortening until coarse crumb texture. Stir milk into mixture. Knead and roll out to 1/2 to 3/4 inch thick. Use cup to cut into circles. Bake at 425 degrees for 10-12 minutes.
for Family size times it all by 3 I think and put on 10x15 pan. (salt was just 1 1/2 though)

Apfel Streudel (APPLE STREUDEL)


Bust out an apple corer.
Core yourself 6 apples. I left the peels on. Mmmm.
Sautee em in about a half a stick of butter, lid on, till they're soft. I used a hamburger masher to break into smaller pieces.

Make a sauce to pour over the apples. It's the sauce I use for peach cobbler.
3/4 c. sugar
2 T. Flour
1/2 tsp. cinnamon
1/4 tsp. salt
---- mash in 1 T. Butter-----
then add:
1 tsp. vanilla
1/2 c. juice (apple juice from a jug is great)


Make a bread dough from Jan's "Fruit Filled Rolls" recipe:
2 c. sour cream, warmed
1/2 c. warm water
3 T. yeast dissolved in warm water
2/3 c. sugar
2 tsp. salt
2 eggs
1/4 c. margarine
6 c. flour

Mix together, then divide into four balls.
Let rise until double.
Roll into oblong pieces- then lay two on a cookie sheet (fills 2 cookie sheets)
Fill each one with 1 cup filling.
Make 1 inch slits in sides of dough, about 1 inch apart from each other, on the long sides of dough.
Fold in ends then "braid" sides (cross or overlap).

Let rise again. Bake at 350 degrees for 15-20 mins.

Eat with whipped cream or vanilla ice cream :)

APPLE MUFFINS-

Jan Walker's Awesome Recipe


Stir together:
2 eggs
1 cup milk
1/2 cup oil
1 cup grated apple

Blend dry ingredients:
3 c. flour
1 c. sugar
4 tsp. baking powder
1 tsp salt
1 tsp. cinnamon

Topping:
2/3 c. brown sugar
1/2 tsp. cinnamon
2/3 c. chopped nuts

Stir just til flour is moistened.
Fill muffin tins 2/3 full.
Sprinkle w/ topping just before baking.
Bake at 400 for 12-15 mins.
Makes about 18+ muffins.

Waffles without Waffle Iron

The Waffle Recipe is simple-
2c flour (feel free to do half wheat/half white or bread flour)
3tsp baking powder
1tsp salt
3 eggs, SEPARATED-
(save whites and food processor or blender them till peaks form)

Fold in egg whites

1 & 1/4 c. Milk
1/2 c. shortening

No waffle iron? Use a sandwich maker!

Easy baking powder biscuits

2 cups flour
1/2 tsp salt
2 1/2 tsp baking powder
5 TBSP butter
1 (scant) cup milk

Combine flour, salt, and baking powder. Cut in butter with a pastry blender until largest crumbs are the size of a pea. Add milk, toss with a fork to make a dough. Fold it over itself a few times, not really "kneading", just combining. You want to maintain the layers of butter and flour to get a light, flaky biscuit.

Break off chunks into circles or squares or whatever shapes and slap on a cookie sheet.

Bake at 425 degrees approximately 15 minutes.

I use whole wheat flour, and like the flavor. Remember, handling biscuit dough for too long makes dense, hard biscuits, so if you don't mind an "ugly" biscuit it will taste better for the less handling.

Homemade Hamburger Buns, Fries, Burgers







We made this Sunday dinner almost entirely from scratch! About a week ago, I used the apple cutter to make a ton of potato wedges. I put em in the freezer and today we just threw them in the Fry Daddy and fwa-la! French Fries! Jared made hamburgers from scratch (not premade frozen patties) and is now an advocate for the Tupperware hamburger press! LOL. And the tomatoes are from our garden (which we really have little time for, but it gives to us anyways!) The jam we made over a month ago together for a family night, and tonight we had no hamburger buns, so I thought, "I'll bet the Walker Family Cookbook has it and ta-da, it did! They were super easy for a bread recipe and are so good I want them again! I was so excited at how pretty they turned out.The eclairs are overkill, I know, but I'd just made them for the ward dessert contest, (and got second place!) and had TONS of filling left (can't let pudding and whipped cream go to pot!) so I whipped up some more to gobble up tonight!

German Pancakes

I never ate this in Germany. But they sure are delicious!


Coat 9x13 pan in 1/4 cup melted butter

In bowl mix:
1 cup milk
1 cup flour
6 eggs

Pour ingredients into the pan & put into COLD oven. Turn oven on to 450 degrees & bake for 20 minutes.

Cut into slices and top with applesauce & whipped cream. Lukas loves these!

Pupusa


This is EASY for a quick dinner that tastes AWESOME and is SO filling!
Get tortilla flour at WalMart. Follow the directions on the back for making the dough. (You knead it, let it sit for 15 mins, then roll out little balls, press em flat, fold up some CASO FRESCO inside, then fry em!

Whala! Dinner!

Just pile on your favorite Mexican toppings: taco-seasoned meat & tomatoes, salsa, sour cream, avacado, you name it!

Pizza!

The Dough:
  • 1 pkg active yeast (I figure that is a little less than 1 T or 2 2/3 tsp)
  • 1 tsp sugar
  • 2 T oil
  • 1 c. warm water
  • 1 tsp salt
  • 2 1/2 c. flour
Dissolve yeast in warm water. Stir in remaining ingredients; beat well with spoon or fork. Let rest 5 minutes. Mix dough and place in cookie sheet. It takes some stretching, but keep trying.
*For one of those jelly roll pans I make 1.5 batches
The Sauce:
I use the sauce I've cooked down over the summer and frozen in zip locks in the fridge.  You can also cheat and use a can or bottle of prepared sauce (I like Bertolli's organic sauce)

Auntie Anne's Pretzel Recipe




Aunt Annie's Soft Pretzels

Serves/Makes: 12 | Difficulty Level: 4 | Ready In: 30-60 minutes

Ingredients:

1 1/2 cup warm water
1 1/8 teaspoon active dry yeast
2 tablespoons brown sugar
1 1/8 teaspoon salt
1 cup bread flour
3 cups regular flour
2 cups Warm water
2 tablespoons baking soda
to taste coarse salt
4 tablespoons butter (melted)




Directions:
Sprinkle yeast on lukewarm water in mixing bowl; stir to dissolve. Add sugar, salt and stir to dissolve; add flour and knead dough until smooth and elastic. Let rise at least 1/2 hour.

While dough is rising, prepare a baking soda water bath with 2 cups warm water and 2 Tbsp baking soda. Be certain to stir often. After dough has risen, pinch off bits of dough and roll into a long rope* (about 1/2 inch or less thick) and shape. Dip pretzel in soda solution and place on greased baking sheet. Allow pretzels to rise again. Bake in 450 oven for about 10 minutes or until golden. Brush with melted butter and enjoy!

Toppings: after you brush with butter try sprinkling with coarse salt. or for Auntie Anne's famous Cinnamon Sugar, try melting a stick of butter in a shallow bowl (big enough to fit the entire pretzel) and in another shallow bowl make a mixture of cinnamon and sugar. Dip the pretzel into the butter, coating both sides generously. Then dip again into the cinnamon mixture. Enjoy!

* The longer and thinner you can make the dough rope, the more like Auntie Anne's they will be. (Of course I don't have the counter space!)

*Sweet butter, not regular butter, is one of her secrets!

Unbeatable Banana Bread

Those neglected bananas may be too brown to peel and eat, but they're soft and sweet and make banana bread moist. Toss in chopped walnuts, dried cranberries, or mini chocolate chips for a wholesome lunch box treat or after-school snack.

As bananas ripen, their starches turn to sugar and the pulp softens. To ripen bananas more quickly, enclose them in a brown paper bag with an apple, which releases a natural gas (ethylene) that hastens the process. (Halt ripening by storing them in the fridge; the skin will brown but the fruit inside won't change.)
What makes a banana bread light?
For a light, quick bread, handle the batter gently, mixing it just enough to incorporate wet and dry ingredients. Overmixing strengthens the gluten, the protein in flour that gives yeast bread its chewy texture -- which you don't want in a quick bread. Finishing up with a wooden spoon helps ensure that the batter isn't overmixed.

2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
1 cup sugar
2 eggs, at room temperature
1 teaspoon vanilla extract
3 medium-large very ripe bananas (1 cup mashed)
1/2 cup sour cream

Step 1 Heat the oven to 325°. Line a 5- by 9-inch loaf pan, preferably one with a light interior, with enough waxed paper to drape over the long sides. This will make the baked bread a cinch to remove and the pan easy to clean. Set the pan aside.

Step 2 Sift together the flour, baking powder, baking soda, and salt into a medium bowl. In a large bowl, cream the butter using an electric mixer. Gradually add the sugar, scraping down the sides of the bowl as necessary. Add the eggs one at a time, beating well after each addition. Next, add the vanilla extract and blend briefly. Set both bowls aside.

Step 3 Peel the bananas and place them in a separate bowl. Mash them with a fork or a potato masher and measure out 1 cup. Add the sour cream and stir to blend. Set the bowl aside.

Step 4 Using a wooden spoon, blend a third of the dry mixture into the butter-sugar mixture. Add the rest of the ingredients in this order, stirring well after each addition: half of the banana mixture, half of the remaining dry mixture, the rest of the banana mixture, the rest of the dry mixture. Next, add mix-ins if desired (see below).

Step 5 Scrape the batter into the prepared pan and smooth the top with a spoon. Bake on the center oven rack until a tester inserted deep into the center of the bread comes out clean, about 70 to 75 minutes.

Step 6 Transfer the bread to a cooling rack and cool it in the pan for about 20 minutes. Using the waxed paper, lift the bread from the pan and place it on the rack. Pull down the sides of the paper and allow the bread to cool thoroughly before slicing. Makes 10 or more servings.

Step 7 For custom flavors that are sure to please everyone in your clan, try these fun variations.Chocolate Chip Walnut Banana Bread: Follow steps 1 through 4, then stir 2/3 cup mini chocolate chips and 1/3 cup chopped walnuts into the batter.Cranberry Banana Bread: Follow steps 1 through 4, then stir 1 cup dried cranberries into the batter.
